Through a series of pre-treatment and grinding stages—including cleaning,roasting,peeling,grinding,ball mill and packing—cocoa beans are transformed into cocoa liquor with a uniform texture. This liquor serves as a raw material for producing chocolate, cocoa powder, beverages, cocoa butter, and various other cocoa-based products, desserts, and snacks.

Cocoa Paste Making Process

Large quantities of raw cocoa beans undergo a sequential pre-treatment process involving the removal of impurities, stones, defective or moldy beans, and metal contaminants, followed by size grading. The beans are then conveyed via a lift to a roasting and cooling unit, where they are roasted at temperatures typically ranging from 160°C to 180°C for durations adjusted according to moisture content and desired roast level.

After cooling, the beans enter a winnowing machine, where rollers rub against them to loosen the shells; the mixture then falls onto a vibrating screen for size separation, while fans suction the detached shells—varying in size—out of the machine into a cyclone separator for storage.

The winnowed cocoa nibs are discharged onto a conveyor belt and transported to a combined mill, where they are ground into cocoa liquor within the gap between the stator and rotor. The resulting liquor is drawn by a vacuum pump into a temporary storage tank before being fed into ball mills; inside these mills, the impact and friction of steel balls against the material progressively reduce particle size to the required fineness, after which the product is ready for various types of filling operations as needed.

Cocoa Bean Pre-treatment

The first step is cocoa bean pre-treatment. Raw cocoa beans may contain dust, stones, metal particles, broken beans, and other impurities; therefore, proper pre-treatment is essential before subsequent processing. This system can also be used to process various grains such as soybeans, red beans, corn, and wheat.

Depending on the quality of the raw cocoa beans, the pre-treatment system may include processes such as cleaning, screening, and magnetic separation.Effective pre-treatment can:

Cooling and Peeling

This peeling machine is designed specifically for processing cocoa beans. After roasting, the cocoa beans enter the hopper for uniform feeding. Shell removal is accomplished by rollers that rub the shells off. A fan extracts the detached shells and discharges them through the bottom of a cyclone separator, while the peeled cocoa nibs exit through the discharge outlet. Effective separation of shells and nibs can be achieved by adjusting the airflow and the gap between the rollers.

The machine features a vibrating sieve structure that grades the peeled nibs and residual shell fragments, further removing impurities and ensuring thorough separation. Any cocoa beans not fully peeled are detected and returned to the hopper via a series of blue pipes for a second peeling, ensuring a high peeling rate and minimizing raw material waste.

Cocoa Bean Roasting

After pretreatment, the cleaned cocoa beans are roasted at a controlled temperature.

The cacao bean roasting machine is a multipurpose roaster, suitable for roasting various nuts , such as peanuts, walnuts, almonds, cashew nuts, cocoa beans, coffee beans, and sunflower seeds. The roaster is first used in cocoa paste making machines.

The temperature typically ranges from 160°C to 180°C, with roasting times adjusted based on the cocoa beans’ moisture content and the desired degree of roast. Additionally, we offer other types of roasters, including machines that integrate continuous roasting and cooling.

Cocoa Mass Ball Mill Machine
